If the Annual Conference, as the name implies, is the heart of the annual event, nevertheless the competitions laid down by the founders are a recurring annual activity which each year enable hundreds of young people to compete with others in several of the specialisms taught in Europe: pastry, culinary arts, restaurant service, bar service, flambée work, front office, tourism, management.
In Jesolo, certain contests were organised within the ‘tourism palace’, others took place at the Cornaro Institute on the outskirts of the town, with a continuous shuttle-bus service. Thanks to the competitions committee the contests were perfectly organised with some minor exceptions, and instructions were followed to the letter. Thus at the Cornaro Institute, whereas the well-attended briefing meetings allowed everyone to have a good overview of what was involved, during the competitions themselves the teachers and other visitors were strictly forbidden to go beyond a certain point; even the AEHT’s journalist who was forbidden access to the kitchens where he wanted to take a few snaps.
